Wheat flour and jaggery based sweet especially made for nursing mom's and also a perfect winter snack
This wheat flour and jaggery based sweet is very easy to prepare. It is a very quick and authentic gujarati recipe which requires only 3 ingredients ghee, atta and gur. However I have also added 3 more ingredients like desiccated coconut, gaund and katlu powder. The later 3 ingredients are given especially to nursing mothers. For those who don't know what is katlu powder I am sharing an image below.

There are many brands of katlu powder available in market. But I prefer using Hathi Katlu Powder as it is the best.
Gur Papdi can stay for long enough so we can carry them while travelling also. In the below picture you can see how perfect and melt in mouth the gur papdi have come out. In my house my mom use to feed this sweet in winters.
Tips for making gud papadi
- When the wheat flour is roasted it changes it's color and also you get nice aroma
- I have added edible gum(gaund), desiccated coconut and katlu powder however it's optional you can omit it if you do not have these ingredients
- You can also add cardamom powder, however i do not like the taste so never add it to any sweets
- Always make sure you grate the jaggery which will prevent any lumps formation
- To make sure the gur papadi doesn't get chewy, always switch off the stove and then add jaggery
- Gur papadi always taste best when its warm. You can store this for 15-20 days easily at room temperature
- Before serving each time you can reheat it in microwave if you wish
So lets proceed step by step for making gud papadi
In a thick bottom vessel heat ghee
Now add sieved wheat flour
Roast the wheat flour in ghee on a medium flame
As the wheat flour gets roasted it will spread a nice aroma in your kitchen and the color will turn light brown
Now add gaund or edible gum. It is an optional ingredient
Now when you roast the gond/gaund it will puff up like popcorn as you can see in the below picture
Now add desiccated coconut
Also add one heaped tablespoon of katlu powder. Mix all the ingredients well and cook for a minute
Now switch off the stove and add jaggery and mix well
Let the jaggery melt and blend well with all the ingredients
Immediately pour the mixture into a greased plate. Flatten it and spread it on a plate with the help of a spatula or a bowl
When it is warm cut it into desired shape(square or diamond)
Serve it warm to your family. Or let it completely cool and then store it in a airtight container and eat whenever you feel like.

Ingredients
- 1 cup Wheat Flour
- 5-7 tablespoon Ghee(Clarified Butter)
- 3/4th cup grated Jaggery
- 1 tablespoon desiccated
- 1/4th tablespoon edible gum(gaund/gond)
- 1 tablespoon katlu powder
- Salt to Taste
Instructions
- Heat ghee in a thick bottom pan

- Let the jaggery melt and blend well
- Immediately pour the mixture on to a greased plate and spread it on the plate with the help of a spatula or bowl
- When it's warm cut it into desired shape (square /diamond)
- Serve it warm to your family. Or let it completely cool down store it in air tight container and then serve as required
