Masala Puffed Rice
Masala Puffed Rice is an all time favourite evening snack and a key ingredient for Sukha Bhel, the famous Indian chaat

Kurmura, murmura, murmure, mumra are different names we know this famous ingredient. We can prepare a lot of dishes with murmure like bhel, murmure ladoos, bhel puri, murmure ka upma etc

Murmure are very light and low in calories, so its a best snack or munch for weight watchers. It is very easy to digest so it is also good option to serve when someone is sick in the house. In this post I have shown step by step recipe for masala puffed rice and peppered puffed rice. 

I always make masala puffed rice and store it in air tight container. Whenever I feel like eating something spicy and chatpatta I quickly make sukha bhel with the masala puffed rice. I have added some fried peanuts and sev to give a nice crunchy effect to the masala puffed rice.

Peppered puffed rice is best when someone is suffering from fever or bad stomach. It is made in ghee and sprinkled with some pepper powder. Puffed rice are easy to digest and adding pepper gives a nice flavor. 

Tips for making masala puffed rice
  1. If the puffed rice have become soggy, dry roast it before using it.
  2. Adding turmeric in the oil while roasting the puffed rice will give a equal and light yellowish colored puffed rice.
  3. Puffed rice burn very easily so while roasting use a slightly thick bottom pan.
  4. Do not leave the puffed rice unattended on stove, it will burn quickly.
  5. Store the masala puffed rice in air tight containers, as they become soggy.
  6. Masala Puffed rice can easily last for a month.
  7. You can even add some fried poha (rice flakes), some crushed puris, chana dal etc and make a nice crunchy chivda.

So lets proceed step by step for making masala puffed rice


Dry roast the puffed rice on a low flame.  After the puffed rice are roasted transfer it in a plate and keep aside. This step is only if your puffed rice has become soggy

In a deep & thick bottom pan heat oil 

On medium flame fry the peanuts until light brown in color. Keep stirring in between

Transfer the fried peanuts in a bowl and keep aside

Now in the same oil add mustard seeds and curry leaves 

Add turmeric powder. Adding turmeric powder in this step will coat the puffed rice evenly and will give a nice light yellowish color

Now add the puffed rice

Mix well and stir continuously for 2-3 minutes

Add red chilli powder & salt and again mix well

Add the fried peanuts and some sev

Masala puffed rice is ready.

Masala Puffed Rice
For making peppered puff rice

Heat ghee in a deep bottom vessel

Add turmeric powder

Add puffed rice

Mix well till the puffed rice are evenly coated in yellowish color

Now add pepper powder and salt

Mix nicely and our peppered puffed rice is ready.

Always serve peppered puffed rice hot, it tastes best that way.

Ingredients
  • 4 cups Puffed Rice
  • 5-7 Curry Leaves
  • 1/2 cup Peanuts
  • 1 cup Sev
  • 1/4th tablespoon Mustard seeds
  • 1/4th tablespoon Red Chilli Powder
  • 1/2 tablespoon Turmeric Powder
  • 3-4 tablespoon Oil
  • Salt to Taste

Instructions
  1. Dry roast the puffed rice on a low flame.  After the puffed rice are roasted transfer it in a plate and keep aside. This step is only if your puffed rice has become soggy
  2. In a deep & thick bottom pan heat oil 
  3. On medium flame fry the peanuts until light brown in color. Keep stirring in between
  4. Transfer the fried peanuts in a bowl and keep aside
  5. After the fenugreek seeds turn dark brown add dry red chilli, cinnamon stick, cloves, curry leaves, mustard seeds and finally cumin seeds
  6. Now in the same oil add mustard seeds and curry leaves 
  7. Now add the puffed rice
  8. Mix well and stir continuously for 2-3 minutes
  9. Add red chilli powder & salt and again mix well
  10. Add the fried peanuts and some sev
  11. Masala puffed rice is ready.

I am now going to add some onions, tomatoes, green chillies, coriander leaves and lemon juice to the masala puffed rice and make yummy sukha bhel :)

    1. Yes you can store it in air tight container, in your kitchen cabinet easily for 15-20 days

  6. Masala puffed rice can be added with fried Garlic. After frying the peanuts garlic can be fried or halfway through the frying of peanuts garlic can added for frying.
