Quick and easy pulav to make, which is a blend of spicy and rich flavors

Gujarati pulav is a very famous dish served during lunch with gujarati kadhi. Its a no onion garlic pulav. Its very rich because it includes ghee, cashew nuts and raisins. Its is a blend of sweet and spicy flavors.

A pulav can be made in three different ways. You can make this pulav in pressure cooker. For making gujarati pulav in pressure cooker, to 1 cup of rice add 2 cups of water for 3 whistles. Or you can make pulav in this a pot like I usually prefer making jeera rice . Where I first season the rice and allow it to cook slowly in a pot. Generally for any pulav recipes like gujarati pulav or tava pulav I prefer first boiling the rice and then season it with spices and dry-fruits.

Tips for making a perfect gujarati pulav
  1. Always use good quality basmati rice to make any rice dish, for better taste and looks.
  2. Soaking the rice for sometime, gives longer and softer grains. It also reduces cooking time.
  3. You can add other vegetables like capsicum, cauliflower, french beans, sweet corn etc.
  4. Adding ghee makes the pulav rich. However you can replace ghee with oil.
  5. I have used ready made MDH pulav masala. But if you prefer you can make fresh pulav masala at home. Grind cinnamon stick-1/4th inch stick, pepper corns-1/4th tablespoon, green cardamom-2 pieces, cloves 3 pieces, star anise-small piece to a coarse mixture, your home made pulav masala is ready.

So lets proceed step by step for making gujarati pulav



For making pulav we require a few dry ingredients for tempering. Cloves, cinnamon stick, cumin seeds, bay leaf and curry leaves.

Peel and chop the carrot into cubes. Take cashew nuts and slit them into half 

Boil the peas and carrots for 5 minutes. We want the veggies to be crunchy and firm but not raw. Strain the veggies and keep aside.

Wash the rice 3-4 times in water and soak it for 30 minutes.

Now boil the rice in a pot  

Once the rice is cooked and soft, strain the excess water and leave aside

Allow the rice to completely air dry and your perfect rice is ready for making gujarati pulav

Heat ghee in a non stick pan

Add all the dry spices and cook for a minute

Now add cashew nuts and raisins. Mix well and do not end up burning the cashew nuts just toss them quickly

Add the boiled peas and carrots

Now add salt and pulav masala. I have used MDH Pulav Masala

Mix all the ingredients well and cook for a minute

Fluff up the boiled rice and add rice in batches, do not add all the rice at once

Gently mix the rice well and coat it well with spices and ghee. Do not over do the mixing otherwise the rice grains will break. 

Gujarati Pulav is ready serve hot with Gujarati Kadhi.

Ingredients
  • 2 cups Basmati Rice
  • 1/2 cup Peas
  • 1 Carrot
  • 1 Bay Leaf
  • 1/2 inch Cinnamon Stick
  • 2-3 Cloves
  • 1 tablespoon MDH Pulav Masala(or any other brand)
  • 1/4th tablespoon Cumin Seeds
  • 2 tablespoon Cashew nuts
  • 2 tablespoon Raisins
  • 1 tablespoon Ghee(Clarified Butter)
  • 1 tablespoon Oil
  • 3-4 Curry Leaves
  • 2 tablespoon Coriander Leaves
  • Salt to Taste

Instructions
