Cabbage sambharo is a spicy gujarati cabbage stir fry, often served as a side dish with meals
Cabbage sambharo popularly known as "kobi no sambharo" in gujarati. Its a quick stir fried cabbage in gujarati style. It is served as a side dish with meals. On the day i had made cabbage sambharo i had also made jain moong dal, rice and phulkas a quick complete meal.
You can also add some thinly sliced carrots too in this sambharo. Many also prefer adding a littli sugar to the cabbage sambharo, however i don't like adding sugar as it gives a slightly sweet taste.

So lets proceed step by step for making cabbage sambharo
Shred the cabbage thinly. Wash the cabbage 3-4 times in running water
Sprinkle some salt to the thinly shredded cabbage
Slice the chillies into half. By the smell of chillies you can know if they are spicy or not. If the chillies are spicy then remove the seeds
Heat oil in a pan add mustard seeds after they pop up add curry leaves
Now add turmeric powder. This will give an even light yellow color to your cabbage sambharo
Next add slit green chillies
Saute them for a minute
Now add cabbage
Mix all the ingredients well, close the lid and cook for 3-4 minutes
Cabbage Sambharo is ready.

Ingredients
- 2 cups Cabbage Shredded
- 3-4 Green Chillies
- 2-3 tablespoon Oil
- 1/4th tablespoon Mustard Seeds
- 1/4th tablespoon Turmeric Powder
- 4-5 Curry Leaves
- Salt to Taste
Instructions
- Shred the cabbage thinly. Wash the cabbage 3-4 times in running water
- Sprinkle some salt to the thinly shredded cabbage
- Rub the cabbage and salt with your fingers. Doing this cabbage will leave some water. Squeeze the excess water by pressing between your palms
- Slice the chillies into half. By the smell of chillies you can know if they are spicy or not. If the chillies are spicy then remove the seeds
- Heat oil in a pan add mustard seeds after they pop up add curry leaves
- Now add turmeric powder. This will give an even light yellow color to your cabbage sambharo
- Next add slit green chillies, saute them for a minute and then add cabbage
- Mix all the ingredients well, close the lid and cook for 3-4 minutes
- Cabbage Sambharo is ready.
With Cabbage sambharo i had made jain moong dal, rice and phulkas. A complete and quick meal.
