Mushroom Matar
Mushrooms and fresh green peas cooked in a perfect Punjabi style onion and tomato curry

Mushrooms are very rich in nutrition and very low in calorie. Many people don't like Mushrooms, but the key with Mushrooms is always the preparation. I like adding mushrooms to lot of dishes like Pizzas, Pastas, Curries etc. They can also be marinated and barbecued or tandoored.

One famous curry preparation of Mushrooms is "Mushroom Matar" cooked in a spicy tomato & onion gravy. I have made this gravy rich by adding cashew nuts paste and fresh cream.

You can serve this Mushroom Matar Curry with Parathas, Naan or Kulchas. Today I have made this delicious Mushroom Matar Gravy with whole wheat Lachha Mint Parathas. Do check the recipe :)

So lets proceed step by step for making Mushroom Matar

Put 2 large tomatoes, red tomatoes in hot boiling water and boil for 2 minutes . This is called blanching. You can make the puree even without blanching, but blanching the tomatoes makes the puree smooth.

Puree the tomatoes in a grinder and keep aside.

To give a nice red color to tomato puree you can add a wedge of boiled beet and puree it with tomatoes. Or you can even use the ready-made tomato paste available in market. That has a nice red color.

Finely chop the onions

Also finely chop ginger and garlic.

Soak few cashew nuts in hot water for 8-10 minutes. Then grind the cashew nuts in a grinder with a little water to make a fine paste.

Cut the mushrooms into quarter pieces. Cook mushrooms in boiling water with little salt and turmeric powder.

Heat oil in a non-stick pan and add curry leaves

Add finely chopped onions and sprinkle some salt

Cook till the onions are translucent and then add finely chopped ginger & garlic

Cook till the raw smell of ginger and garlic is gone and add the tomato puree we prepared earlier

Add masalas like turmeric powder, red chilli powder, coriander powder, cumin powder and salt

Mix all the ingredients well and add cashew nuts paste

Now add some cream and cook for about 10 minutes

Add the boiled mushrooms with little water

Finally add green peas and mix. Cook for 2-3 minutes

Now add garam masala and mix well

Our Mushroom Mutter is ready. Garnish with coriander leaves and serve hot.
