Vegetable Korma
Most of you must have ordered Vegetable Korma in a restaurant. Vegetable Korma is a famous curry dish that can be made with different variations. One of the most popular variation is Navratan Korma. However Navratan Korma is slightly sweet in taste and many of us who prefer spicy curries might not like it. The Korma version that I have prepared here is mildly spiced with fresh garam masala. Korma curry is slightly different than some other curries I have made like Corn Curry and Vegetable Jaipuri. After trying Dum Aloo in Cooker I decided to use pressure cooker for this Korma. Pressure cooking preserves the nutrition of the vegetables and instils the flavor of the spices. It also makes cooking easier. So lets proceed step by step.


To make Vegetable Korma I have used potatoes, carrots, capsicum, french beans, peas) and cut them into cubes. You can use any vegetable of your choice.

To make the garam masala for mix vegetable korma we need dry red chillies, desiccated/shredded coconut,  garlic cloves, coriander powder, Chana dal/split Bengal gram, cumin seeds, cloves, cinnamon stick, khuskhus/poppy seeds.

In grinder add all the masalas little water.

Grind it to a very fine paste.

Heat oil in pressure cooker.

Add curry leaves and sauté for a minute.

Now add onions and sprinkle some salt.

Cook the onions till they are translucent.

Now add chopped tomatoes and cook till they are soft and tender.

Add the garam masala paste we have prepared. Cook the paste on low flame for 3-4 minutes. This garam masala paste as it gets cooked you will get nice aroma.

Now add all vegetables and toss for 2-3 minutes in the tomato curry

Add 1 cup water and add 3-4 tablespoon fresh cream. Now mix all ingredients well and pressure cook for 2 whistles on high flame. After 2 whistle put the gas on low flame and cook for 1 more whistle.

Mix Vegetable Korma is ready.

Serve hot with steamed rice.

RECIPE OF MIX VEGETABLE KORMA
Vegetables cooked in a spiced curry with fresh garam masala

INGREDIENTS
  • 2-3 Dry Red Chillies
  • 3 Garlic Cloves
  • 1/2 inch Cinnamon Stick
  • 3 Cloves/lavang
  • 1 tablespoon Chana Dal/Split Bengal Gram
  • 1 tablespoon Khuskhus/Poppy Seeds
  • 1/4th tablespoon Cumin Seeds
  • 2 tablespoon Desiccated/Shredded Coconut
  • 1 tablespoon Coriander Powder
  • 4-5 tablespoon Oil
  • 5-6 Curry Leaves
  • 1 bowl Mix Vegetables(potatoes, carrots, capsicum, peas, french beans)
  • 1 small Onion
  • 1 small Tomato
  • 3-4 tablespoon Fresh Cream
  • 1 cup Water

INSTRUCTIONS
