Vegetable Puff
Vegetable puff, crispy and spicy snack served with tomato ketchup

Puff are one of my favourite evening snack. Its a healthy version of vegetable samosa. To prepare these vegetable puffs you will need a good quality baking oven and pastry sheets. Select pastry sheets which are of good reliable brand. The sheets can be used and made into any shape you like. I have used peas and potato stuffing. But you can add capsicum, french beans, carrots etc. 

Vegetable Puffs are tasty, healthy and a quick way to escape hunger. It is an excellent crispy and crunchy snack. So lets proceed step by step.

We will first prepare the stuffing.

Boil about 4-5 potatoes and fresh green peas in pressure cooker . Drain the excess water and allow it cool. After the potatoes cool a little peel its skin.

Mash both peas and potatoes together. You can also finely chop potatoes into cubes.

Chop onion, ginger, garlic and green chillies

Heat oil in a pan

Then add cumin seeds and allow them to crackle

Add chopped onions and cook till they turn translucent.


Now add chopped ginger, garlic and green chillies. Saute for 2 minutes so that the raw flavors of ginger and garlic disappear

Now add the mashed peas and potato mixture.

Add turmeric powder, red chilli powder

Also add coriander powder, garam masala and salt


Finally add lemon juice and mix all the ingredients well

Cook for 2 minutes and stuffing for making Vegetable Puff is ready.

Before we start rolling the puff into shape Preheat the oven at 180 degrees. 

Remove the ready made store bought sheet from the freeze and lay it on a flat chopping surface

According to your size of pastry sheet cut the sheet into desired shape

Place about 2 tablespoon of stuffing we prepared on one side of the sheet

Now fold the other side and cover it. You can make any shape you like, I had made both shapes of puff triangle and rectangle 


Line a baking tray with aluminium foil and arrange the puffs.

Bake the puffs for 15-20 minutes, until golden brown in color

Vegetable puff are ready serve hot with tomato ketchup

  • 1 Ready made pastry sheet
  • 5 Potatoes
  • 1/2 cup green peas
  • 2 tablespoon oil
  • Pinch of Asafoetida
  • 1/2 inch ginger
  • 1 Onion
  • 1 Garlic
  • 1 Green Chilli
  • 1/4th tablespoon Turmeric Powder
  • 1/4th tablespoon Red Chilli Powder
  • 1/4th tablespoon Coriander Powder
  • 1/2 tablespoon Garam Masala
  • 1 tablespoon Lemon Juice
  • Salt to Taste
