Broccoli Soup Recipe

A smooth vegetable soup made from broccoli, onions, potatoes and garnished with some cheese, yummy!!

Broccoli is one vegetable which I am not very fond of. I have tried broccoli parathas before but didn't win my taste. From that day I decided no broccoli in my house, until I tasted this broccoli soup at my friend Shreya's place. I liked it so much that I made sure to take recipe from her and try it. A big thanks to her for bringing back broccoli in my kitchen. It's delicious smooth and flavorful soup. 

I know broccoli has many benefits like 
  1. It is antioxidant
  2. Rich in Vitamin C
  3. Prevents Cancer 
  4. It's good for skin
I was missing all these benefits by not eating broccoli.

There are many ways to incorporate broccoli in your diet like broccoli paratha, broccoli pasta, broccoli salad etc but I liked the best in this soup.

Tips
  1. Add little oil to prevent the butter from burning. I prefer using olive oil but you can use any cooking oil
  2. If you are calorie conscious you can avoid butter and cheese
  3. Do not throw the water collected from boiled & strained veggies, as its full of nutrients

So lets proceed step by step for making broccoli soup


Break the broccoli into florets and wash them in running water. Chop onions, potatoes and some garlic

Heat some butter and olive oil in pressure cooker. 

Add some chopped garlic and saute for a minute so the raw flavor of garlic disappears

Now add chopped onions and cook till they become translucent

Add chopped potatoes

Now add broccoli florets and saute everything for a minute

Add 2 cups of water and pressure cook for 3 whistles on a medium high flame 

Strain the boiled veggies. I have collected the strained water to use it in my soup

Make a smooth lump free puree of the veggies

Now in a vessel add the water we had collected from straining veggies. And add the above prepared puree to it

After the soup comes to boil add some milk

Also add black pepper powder, salt and mixed herbs. Simmer the soup for 5 minutes.

Yummy Broccoli Soup is ready. Sprinkle some grated cheese and mixed herbs and serve hot.

Ingredients
  • 1 small head Broccoli
  • 1 Onion
  • 1 Potato
  • 3-4 Garlic Cloves
  • 1 cup Milk
  • 1 tablespoon Butter
  • 1 tablespoon Olive Oil
  • 1/4th tablespoon black pepper powder
  • 1/4th tablespoon Mixed Herbs
  • 1 Cheese Cube for garnishing
  • Salt to Taste
