A refreshing new version of the famous "Hot & Sour Soup". A perfect one pot meal for a winter or rainy day
Hot & Sour soup is the most ordered soup in any restaurants. I just love the spicy and tangy soup especially on a rainy day or chilling winters. You can make this soup even better by adding a lots of veggies like carrots, capsicum and mushroom
Adding noodles to this soup makes it a very filling one pot meal. I always remember the soup advertisement "Khake Piyo ya Pike Khayo". Believe me it's the same.

Tips
- For making vegetable stock you can use any veggies you like depending on availability
- Instead of stock you can even use water. I always prefer vegetable stock
- Cornflour paste is added to soup to make it thick, if you do not add the soup will be watery
- Always add spinach at last, so it will retain its color
So lets proceed step by step for making spinach & mushroom soup
To prepare our soup we first require vegetable stock so lets began preparing vegetable stock. Roughly chop & boil the veggies like cabbage, carrots, coriander leaves, onions till tender and soft
Strain the veggies and vegetable stock is ready. Keep it aside
Now chop all the ingredients for the soup like carrots, beans, spring onions, spinach, mushrooms, cabbage and capsicum. Also make paste of ginger chillies and garlic
Sauces you require for this soup are soy sauce, red chilli sauce, green chilli sauce and vinegar
Now heat butter in a wok or thick deep bottom vessel
Add ginger chilli garlic paste and saute for a minute
Add the sliced mushrooms and saute for 5 minutes
Now add the veggies like capsicum, carrots and french beans
Add spring onions and saute all the veggies for another 5 minutes
Now pour 2 cups of vegetable stock we have prepared
Dilute some corn flour in water to make a paste. Add it to the soup
Season the soup with some soy sauce, red chilli sauce, green chilli sauce, vinegar and salt
Add some cabbage and spianch
Finally add some noodles and simmer the soup for 3 minutes
Spinach & Mushroom Soup is ready. Garnish with some spring onions and serve hot.

- 4-5 buttons Mushroom
- 1/4th cup Spinach
- 1 Spring Onion
- 1/2 Carrot
- 1/4th Capsicum
- 1/4th Cabbage
- 6-7 French Beans
- 1 tablespoon Ginger, Garlic, Green Chilli Paste
- 2 tablespoon Soy Sauce
- 1 tablespoon Chilli Sauce
- 1 tablespoon Butter
- 1 tablespoon Soy Sauce
- 1 tablespoon Red Chilli Sauce
- 1 tablespoon Green Chilli Sauce
- 1 tablespoon Vinegar
- 1/2 cup Noodles
- 2 cups Vegetable Stock
- 1 spoon Corn Flour
- Salt to Taste
