A traditional gujarati sweet dish made from broken wheat(dalia)

Gujarati Lapsi is a fabulous tasty dish made from broken wheat also known popularly as "dalia". It's one of the favorite sweet dishes among the Gujratis. It is specially made on auspicious occasions. Buying a new home or a new car, getting a new job or any occasion like naming ceremony or house warming, lapsi is made for all of these. 

Broken wheat is nothing but whole raw wheat grains cleaned and then processed coarsely. As it doesn't undergo refining its very healthy. You can use broken wheat in many dishes like lapsi, khichdi, upma etc. 

For cooking broken wheat just be careful about one thing. The water quantity you require depends on how old the broken wheat is.  If the wheat is old it requires more water for cooking

Tips

  1. For this recipe of lapsi I have added warm jaggery water, but you can just add plain warm water
  2. You can replace jaggery with sugar however I always prefer adding jaggery as its rich in iron
  3. Always roast the broken wheat on medium flame
  4. Stir continuously while roasting otherwise the lapsi will burn
  5. Traditionally lapsi is served with sugar and a spoon full of ghee 


Lapsi is accompanied by dhokla, green moong dal, poori and mixed vegetable. A perfect gujarati (thali) menu for any occasion.

Lapsi can also be made in pressure cooker. Pressure cooker version of lapsi also tastes very good but what I a going to show you is the traditional version. Adding some dried fruits makes this simple sweet tastier and richer.  Now a days even people make lapsi in microwave to reduce cooking time.

So lets proceed step by step for making fada lapsi


Take 2 cups water and bring it to boil

Now add jaggery and dissolve it in the water

Bring the water to boil and strain the water to remove any impurities

Heat ghee in a thick bottom vessel

After ghee melts add the broken wheat

Roast the broken wheat in ghee by stirring continuously

Stir and roast the broken wheat until it changes its color to golden brown. You will get nice aroma as the lapsi is roasted

Slowly pour the jaggery mixture  

Stir continuously until both are well combined

Now add very little sugar. This step is optional. Sugar is added to give perfect sweetness to the lapsi. Also in this step taste the lapsi 

Reduce the flame, close the lid of the pan and cook for 10 minutes. Stir occasionally till the grains are cooked and tender

Switch off the stove and allow the lapsi to rest for 5 minutes. Sprinkle some dry fruits and lapsi is ready

Garnish some dry fruits and serve this lapsi warm.

Ingredients
  • 1 cup Broken Wheat/Fada Lapsi/Dalia
  • 1 cup Jaggery
  • 2 tablespoon Ghee
  • 1/4th cup Almonds
  • 1/4th cup Pistachios
  • 1/4th cup Cashew nuts
  • 2-3 cups water

Instructions
  1. Take 2 cups water and bring it to boil
  2. Now add jaggery and dissolve it in the water
  3. Strain the jaggery water and remove impurities
  4. Heat ghee in thick bottom vessel, after ghee melts add broken wheat
  5. Roast it on a medium flame till it changes its color to golden brown by stirring continuously
  6. Slowly pour the jaggery mixture by stirring continuously until both are well combined
  7. Reduce the flame close the lid of the pan and cook for 10 minutes. Stir occasionally till the grains are cooked and tender
  8. Switch off the stove and allow the lapsi to rest for 5 minutes. Sprinkle some dry fruits and lapsi is ready
  9. Serve the lapsi warm
