The fried rice that you get in restaurants in India are generally mentioned under the Chinese section. They are cooked with Chinese techniques but the flavours are adjusted to Indian taste

Most restaurants in India also serve some other popular indo chinese dishes like  Vegetable Noodles, Gobi Manchurian, Veg Manchurian and Paneer Chilli

The best thing about vegetable fried rice is that you can add any vegetables of your choice like colorful bell peppers, capsicum, spring onions, mushrooms, cabbage and carrots. They are also very easy to cook and always come to your rescue when you are out of options and want to prepare a quick meal

Tips for making fried rice
  1. You can also use left over rice for this recipe as they are already cool and easy to saute
  2. If you use fresh steamed rice be sure you completely cool the rice and then use it to make veg fried rice
  3. Do not add more soy sauce then mentioned in the recipe, it will change the taste and make rice dark brown in color
  4. Make sure not to saute the vegetables for too long, we want them to be crispy
  5. Soy and Chili Sauce already contain some amount of salt, so be watchful while adding salt

So lets proceed step by step for making vegetable fried rice


To prepare our vegetable fried rice, we first need to cook excellent rice. The rice grains need to be well cooked and yet separate from each other. Follow these 5 steps properly and your rice will be spot on.

Select excellent quality long grain basmati rice. Soak the rice in water for about 30 minutes

Strain the excess water and air dry the rice grains for about 10 minutes

Heat very little ghee (clarified butter) in a pan and add the rice grains. Saute so that all grains are nicely coated with ghee

Now add water and cook rice on medium flame.  Also add little lemon juice while cooking the rice

Cook the rice till they are soft and tender

Strain the rice and remove any excess water. Allow the rice to air dry and completely cool down. Our perfect rice for this recipe is now ready :)

Next finely chop capsicum, carrot, french beans, cabbage, and spring onions. Also make a paste of green chillies, garlic and ginger. You can also do this step while the rice is getting cooked.


Heat oil in a pan and add the chopped spring onions

Now add ginger,garlic and green chillies paste

Saute for a minute and add all the veggies

Sprinkle a little salt and cook the vegetables till they are tender and then add soy sauce

Also add chilli sauce 

Mix all the ingredients well and add the boiled rice

Gently mix and cook on a high flame till rice is coated well with sauce

Fried Rice is ready. Sprinkle some spring onion greens and serve hot.

Ingredients
  • 1 cups Basmati Rice
  • 1/2 teaspoon Ghee(Clarified Butter)

  • 1/4th Capsicum
  • 1/4th Cabbage
  • 6-7 French Beans
  • 1 tablespoon Ginger, Garlic, Green Chilli Paste
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Chilli Sauce
  • 1/2 tablespoon Ghee
  • Salt to Taste

Instructions
