Paneer Papad Cones
Crispy papad shaped in cone and filled with spicy salad. A perfect accompaniment for meals and drinks.

Papad is a famous accompaniment to a meal in India. It is sometimes topped with chopped onions, tomatoes and spiced up. It is known as Masala Papad. Masala papad is the most frequently ordered dish for appetizer in any Indian restaurant. However here I am presenting to a different version of Masala Papad in a cone shape and filled with paneer stuffing. Its a great dish to impress your guests with this crispy and lightly spiced starter. 

This recipe is adapted from the cook book "Heaven On Tongue" by Jenish Parmar.

Paneer papad cone are very easy to make. The stuffing is simple yet delicious, papad are ready made. So this recipe doesn't require much techniques. The only tricky part in this recipe is to shape roasted papad into cone. 

Believe me first when I saw this recipe in book I was not sure if I would be able to make a roasted papad cone. But I did in the first try itself. While molding a roasted papad the timing matters. You have to be quick in shaping and your papad because as it cools it refrains its shape. Once the cones are ready, you will be confident and ready to serve your guests.

Tips for making paneer papad cone
  1. Always remember while roasting papad do not keep on one side for too long.
  2. Also do not apply pressure at same place while roasting papad, the excess pressurized part will be burnt.
  3. I have dry roasted the papad on a skillet, however you can add a 1/4th tablespoon oil and roast it on a skillet if you like. This will give a deep fried papad effect.
  4. I have made papad cones, you can even make papad rolls.
  5. Quickly roll the papad in your desired shape before it cools
  6. For the spicy filling for paneer papad cone you can even add some chopped raw mangoes during season, they will taste awesome with this recipe.
  7. For garnishing you can sprinkle some sev, it will look make the cone attractive.
  8. You can make the cones and store them in air tight containers, later you only need to prepare the filling to stuff them.
  9. Always add the spicy filling into cones just before serving. Otherwise the cones will break or fall apart. 

So lets proceed step by step for making paneer papad cone



For making paneer papad cone we will first make the spicy filling. Finley chop onions, tomatoes and paneer. Boil and grate some corn. If you want to make the paneer at home do try my homemade paneer recipe

Now add finely chopped green chillies and coriander leaves 

Also add red chilli powder, salt, cooking oil and chat masala


Mix all the ingredients well and make a spicy filling. Keep the filling aside

Take a papad and cut it into half 

Now roast the papad from both the sides on a skillet/tawa. I have used a kitchen cloth to roast papads however you can  use a wooden spoon also

As soon as the papad is roasted quickly shape it into a cone. If the roasted papad cools down it will become crispy and wont be able to make any shape

Continue the above steps and roast the papad to make as many cones you require. I had made six cones(3 papad).

Now fill the papad cones with spicy stuffing we prepared

Paneer Papad cones are ready. Garnish with some mint leaves and serve immediately

Ingredients
  • 3 Urid Dal Papad
  • 100 grams Paneer(Cottage Cheese)
  • 1 Onion
  • 1 Tomato
  • 2 Green Chillies
  • 1 Cob Corn
  • 2 tablespoon Coriander Leaves
  • 1/4th tablespoon Red Chilli Powder
  • 1/2 tablespoon Oil
  • Few Mint Leaves for Garnishing
  • 1/4th tablespoon Chat Masala
  • Salt to Taste

  2. Very creative. For a large party, would the papad cones stay crisp for a few hours before filling them, if they are stored in an air-tight container?
