Burnt Chana Salad
A protein rich and lip smacking chatpata salad with unique combination of spices, perfect for growing kids

Chickpeas or Kabuli Chana is a very famous ingredient we use in our kitchen. One of the most popular dishes made with Chickpeas is Punjabi Chole. Chickpeas are very healthy and rich in protein, perfect ingredient to serve to growing kids.

All mothers like to make healthy snacks for their kids however something that is simple and quick to prepare. Burnt Chana Salad or Chickpeas Salad is a very healthy salad made with Chickpeas and can be prepared and served very quickly for an evening snack. 

In my snack section you can find many other healthy recipes which are filling and easy to make, Paneer Bhurji Sandwich, Lilva Squares (A healthy version of lilva katchori), Corn and Spinach Quesadillas.

This recipe of Chana Salad is an adapted from a cookbook "HEAVEN ON TONGUE" by Jenish Parmar. The famous chef of ETV gujarati rasoi show.

So lets proceed step by step for making Burnt Chana Salad



Soak the Chickpeas overnight and pressure cook it with little salt till the chickpeas are soft.  Drain the excess water from chickpeas and let them cool. 

The key to make the chickpeas soft and melt in mouth is by adding a pinch of baking soda while pressure cooking.

Chop some onions and tomatoes 

For garnishing the salad I have used few pieces of chopped tomatoes, onion rings, green chillies, coriander leaves, spring onion greens, ginger and fennel seeds

Heat oil in a in a non stick pan

Now add cumin seeds 

After the cumin seeds crackle add the boiled chickpeas

Saute on a medium high flame for 5-7 minutes. Till the chickpeas gets a lightly burnt effect.

Keep stirring in between so the burning effect is equally coated to all the chana.

Add garam masala. I have used MDH Kitchen King Masala in this recipe. Mix well and stir continuously for 2-3 minutes

Now add finely chopped onions

Also add some chopped tomatoes

Add salt, coriander powder, lemon juice and coriander leaves. Mix all the ingredients well and again cook on a medium high flame for 5 minutes.

The onions will slightly change its color and nicely mix with the Chickpeas. That's when you know your Burnt Chana Salad is ready

Garnish with few spring onion greens, ginger, tomatoes, green chillies, fennel seeds and onion rings. Allow the salad to cool a little, sprinkle some chaat masala and serve immediately.

Ingredients
  • 1.5 cups Chickpeas(Kabuli Chana)
  • 1 Onion
  • 1 Tomato
  • 1/2 tablespoon Kitchen King Masala
  • 1 tablespoon Lemon Juice
  • 1/4th tablespoon Cumin Seeds
  • 1/4th tablespoon Coriander Powder
  • 3 tablespoon Oil
  • Pinch of Asafoetida
  • 2 tablespoon Coriander Leaves
  • Salt to Taste

Instructions
  1. Soak the Chickpeas overnight and pressure cook it with salt till the chickpeas are soft.  Drain the excess water from chickpeas and let them cool

  7. Add general purpose garam or Kitchen King masala. Mix well and stir continuously for 2-3 minutes
  8. Now add the chopped onions and tomatoes
  9. Add salt, coriander powder, lemon juice and coriander leaves. Mix all the ingredients well and again cook on a medium high flame for 5 minutes
  10. The onions will slightly change its color and mix well with the Chickpeas
  11. Burnt Chana Salad is ready. Transfer the salad to a bowl and garnish with few spring onion greens, ginger, tomatoes, green chillies, fennel seeds and onions. 
  12. Allow the salad to cool slightly and sprinkle some chaat masala. Serve immediately
