A flavorful Indian style Vegetable Sandwich (famous street food from Mumbai).

Sandwiches in India are highly customized to the local taste. An Indian sandwich is generally made with fresh chutneys like mint coriander, peanut coriander or even spinach coriander chutney. In this recipe I have used the peanut coriander chutney which is the most popular for sandwiches.

The Vegetable Sandwich is a famous street food of Mumbai, but now available in almost all the places. You can see the street vendors making this sandwich right in front of you. You can easily tell the bhaiya (street vendor) if you want it a little spicy or if you want more tomato ketchup. 

The veg sandwich comes in 3 different versions. First is the simple sandwich, the recipe of which I have shared here. You can also sprinkle some grated cheese on this sandwich, even that version tastes great. You can even toast this sandwich on a tawa or sandwich maker. It makes the sandwich hot and crispy. 

Vegetable Sandwich is one dish which the whole family can make and enjoy together. I remember when I was a kid and my mom used to make this sandwich. She will assign something to each one of like trimming the bread, cutting the veggies or applying butter and chutney. It used to be a Sunday filled with family fun and delicious sandwiches.

So lets proceed step by step for making Veg Sandwich

Before we start making sandwich make sure two things are ready. This will make the sandwich making procedure easy and hazel free.

1.Fresh Green Chutney 
2.Boiled Potatoes

For making veg sandwich we require nice and fresh big size bread. In this recipe i have used white bread but you can also use brown bread which is more healthy.

Cut all the veggies (cucumber, tomatoes, onions, boiled potatoes) into thin slices. 

Trim the edges of each bread slice.

Apply 1/2 tablespoon butter on each bread slice.

Now apply 1/2 tablespoon chutney on each bread slice.

Always spread the chutney and butter evenly and nicely so it covers all the edges.

Spread 1/2 tablespoon of cocktail sauce on each bread slice. Applying the cocktail sauce is completely optional. It is not always readily available in the house.

Place four potato slices on the top of applied butter, chutney and cocktail sauce.

Now place four slices of cucumber on top of potato slices.

Now place a slice of onion in the center. 

On top of onion slice place a tomato slice. Sprinkle some cumin powder and salt on veggies.

Take another slice of bread, with buttered side facing downwards and place on the veggies. Press the sandwich lightly.

Carefully cut it into four equal portions . Place the pieces on serving plate. Top up with tomato ketchup and sprinkle some cumin powder. 

Serve the Veg Sandwich immediately. You can also serve some potato chips with the Sandwich.

RECIPE OF VEGETABLE SANDWICH

INGREDIENTS
  • 8 slices Sandwich Bread (white or brown)
  • 2 medium Potatoes (boiled)
  • 2 medium sized Tomatoes
  • 2 medium Onions
  • 1 medium sized Cucumber
  • Butter as required
  • 1/4th cup Roasted Cumin Powder
  • 1/2 cup Cocktail Sauce(Optional)
  • 1/2 cup Peanut Coriander Chutney
  • 1/2 cup Tomato Ketchup
  • Salt to Taste

INSTRUCTIONS
  1. Prepare fresh green chutney, boil the potatoes and peal off the skin
  2. Cut all the veggies(cucumber, tomatoes, onions, boiled potatoes) into thin slices
  3. Trim the edges of all the bread slices
  4. Spread butter, green chutney and cocktail sauce (optional), 1/2 tablespoon each on 2 slices of bread
  5. Place 4 slices of potato and 4 slices of cucumber on one bread slice
  6. On the same slice place one slice of onion and one slice of tomato in the center
  7. Sprinkle some cumin powder and salt on veggies
  8. Place the 2nd bread slice on top of the veggies. Press the sandwich lightly
  9. Carefully cut it into four equal portions and transfer to a serving plate 
  10. Top up with tomato ketchup and sprinkle some cumin powder
