Paneer scrambled with onion-tomato and spices and stuffed between bread

Sandwiches are very easy to make and you can stuff them with almost anything that you like. As vegetarians we have very limited choice for the stuffing and we usually make vegetable sandwich or peas-potato sandwich. However where there is a will there is a way :). So here I present to you Paneer Bhurji Sandwich.

Paneer Bhurji is actually a dish popular with North Indians. Paneer is crumbled and sauteed with onions, tomatoes and spices. Paneer Bhurji is usually had with Naan or Roti however for a change I have used it as a stuffing for my Sandwich to make this amazing Paneer Bhurji Sandwich.

Even kids would like this sandwich. You can also roll the same Paneer Bhurji into a kathi roll or even a paratha for your kids.

I have made paneer bhurji sandwich on a tawa. When we make it on tawa its difficult to get the bread toasted evenly. For toasting bread evenly i always apply some heavy pressure on the sandwich. You can use anything. I have used a flat pressure cooker, that gives nice pressure to the sandwich. Which helps in toasting  and browning the sandwich equally.

So lets proceed step by step for making Paneer Bhurji Sandwich


Heat oil in a non stick pan

Add cumin seeds and allow them to crackle

Add chopped onions and sprinkle some salt

After the onions turn translucent add chopped ginger. garlic, green chillies and cook for 2-3 minutes

Add chopped tomatoes and cook till the tomatoes are soft

Once the tomatoes are soft add turmeric powder, red chilli powder, coriander powder and garam masala

Add the shredded or crumbled paneer

Mix all the ingredients well and cook on a low flame for 2 minutes

Add 2 tablespoon water, mix well and cook. Adding water will make paneer bhurji moist. If the bhurji is dry the filling wont stick to the bread.

Add some chopped coriander leaves

Now take 2 slices of bread. I have used white bread over here. You can use brown bread also.

If you like you can also trim the edges of the bread slices.

Place some Paneer Bhurji we prepared on one slice of bread. Take another bread slice and place on top of the bhurji 

Heat butter on a tava

Now place the sandwich we prepared on the tawa. Apply some pressure and cook till the bread below is golden brown and crispy

Now turn it and cook another side till its golden brown and crispy

Cut the sandwich diagonally by pressing lightly. Serve Paneer Bhurji Sandwich hot with tomato ketchup.

Ingredients
  • 250 grams Paneer
  • 8 slices Bread(brown/white)
  • 1 small Onion
  • 1 Tomato
  • 1 tablespoon Ginger, Green Chilli, Garlic chopped
  • 3 tablespoon Oil
  • 1/4th Cumin Seeds
  • 1/4th tablespoon Red chilli Powder
  • 1/4th tablespoon Turmeric Powder
  • 1/4th tablespoon Garam Masala
  • Butter as Required
  • Handful Coriander Leaves
  • Salt to Taste

Instructions
  1. Heat oil in a non stick pan and add cumin seeds
  2. After the seeds crackle add chopped onions and sprinkle some salt
  3. Allow the onions to be translucent and add chopped garlic, ginger & green chillies
  4. Cook till the raw flavour of ginger and garlic disappear
  5. Add chopped tomatoes and cook till the tomatoes are soft
  6. Once the tomatoes are soft add turmeric powder, red chilli powder, coriander powder and garam masala
  7. Add the shredded or crumbled paneer
  8. Mix all the ingredients well and cook on a low flame for 2 minutes
