Minestrone Soup
The Italian Minestrone Soup is perfect for the cold winters. It is a delicious and authenticate Italian recipe with a lot of vegetables and pasta of your choice.

Italian cuisine is popular all over the world and almost everyone from kids to elders loves the taste of Pizzas and Pastas. The Italian Minestrone soup is yet another popular Italian recipe. It is a one pot meal and popularly also known as pasta soup. It is made with a lots of vegetables and some pasta.  

You can even add chickpeas or red kidney beans to this soup.This is one of those recipes where you can pretty much add any vegetable or pulses of your choice. The soup is perfect for the chilly winters and kids would just love the taste. 

The Italian Minestrone Soup is served hot and tastes best with Garlic Bread. As the soup contains so many vegetables and pasta it is quite filling. I remember once after I ordered this soup in a restaurant in Pune I almost had to skip the main course.

So lets proceed step by step for making Italian Minestrone Soup


Wash and finely chop all the vegetables. I have used carrot, capsicum, french beans, zucchini and cabbage.

Chop 1 tomato, onion and garlic. Also make a puree of 1 tomato.

Heat olive oil in a deep bottom pan.

Add garlic and cook for 2 minutes.

Now add capsicum and saute for a minute.

Add onions and sprinkle some salt. Cook the onions till they are translucent.

Now add chopped tomatoes and tomato puree. Cook the tomatoes till they are soft. The reason we add tomato puree is to make the soup a little thick. 

Now add the vegetable stock.

To make vegetable stock boil a cup of mix vegetables like (carrots,cabbage,peas, onions) in a pan with 2 cups water. Cook till the vegetables are tender. Strain the stock and use it as required.

Bring the vegetable stock to boil and add all the vegetables & pasta.

In this recipe i have used spaghetti pasta for this soup. You can use any pasta like macaroni, penne etc.I have broken the spaghetti into 3 pieces and then added to the soup. So that vegetables and pasta blend easily.

Now add salt, black pepper powder and mixed herbs. Mix well and add some basil leaves. I have just torn the leaves and added.

Cook till the vegetables are soft but firm and pasta is also cooked.

Italian Minestrone Soup is ready. Garnish with basil leaves and serve hot with garlic bread.

INGREDIENTS
  • 1/2 cup Pasta
  • 1/2 Carrot
  • 1/2 Capsicum
  • 1/2 Zucchini
  • 7-8 French Beans
  • 1/4th Cabbage
  • 1 large Onion
  • 2 Tomatoes
  • 3-4 Garlic Cloves
  • 1/2 cup Tomato Puree
  • 3-4 Garlic Cloves
  • 4-5 tablespoon Olive Oil
  • 2 cups Vegetable Stock
  • 1/2 tablespoon Mixed Herbs
  • 1/4th tablespoon Black Pepper Powder
  • 4-5 leaves Basil
  • Salt to Taste

INSTRUCTIONS

  2. Also finely chop the onion, garlic and 1 tomato. Puree the 2nd tomato
  3. Heat olive oil in a deep bottom pan
  4. Add the chopped garlic and cook for 2 minutes. Now add capsicum and saute for a minute
  5. Add onions and sprinkle some salt. Cook the onions till they are translucent
  6. Now add chopped tomatoes and tomato puree. Cook the tomatoes till they are soft
  7. Now add vegetable stock
  8. Bring the vegetable stock to boil and add all the cooked vegetables & pasta
  9. Now add salt, black pepper powder and mixed herbs. Mix well and add some basil leaves
  10. Cook till the vegetables are soft but firm and pasta is also cooked
  11. Italian Minestrone Soup is ready. Garnish with basil leaves and serve hot with garlic bread
