Recipe of Dal Fry | How to Make Dal Fry

Dal Fry
Dal Fry is a popular Punjabi dish made with mixed lentils (dals) like pigeon pea (toor dal), split yellow lentil (moong dal) and split bengal gram (chana dal). A perfect dish to go with Jeera Rice

Dal Fry is one of the first dishes I learned to make during my initial cooking days. There are many other dal variations which I tried before like dal tadka, dal makhani, dal bhukhara etc but was never satisfied with the final outcome. Dal fry was one of the dishes which i found quite easy to cook and it comes out just like restaurants, yet with a homely touch.

Dals are cooked regularly in Indian households, as they are highly rich in protein. The combination of the 3 lentils (toor dal, moong dal and chana dal) makes this dish very unique and healthy.

Dal fry can also be prepared with just toor dal but I always prefer taking all 3 dals in equal proportions. Please remember that we need to soak chana dal and toor dal as they require more time to cook as compared to moong dal.

To make an authentic dal fry we must pressure cook all the dals together and then temper it with curry leaves and Indian spices. Dal fry tastes best with jeera rice and papad. So lets proceed step by step.

Take 1/4th cup of each dal(moong dal, toor dal, chana dal)

Wash the dals 3-4 times in water. Soak chana dal & toor dal.

Add all the dals together and pressure cook for 3-4 whistles with 1.5 cups water.

The consistency of dal should be thick and not very running(watery).

Heat clarified butter/ghee in a deep bottom vessel. Then add cumin seeds and allow them to crackle.

After the cumin seeds crackle add asafoetida, curry leaves, dry red chilli and saute for a minute.

Add finely chopped onions and cook till the onions are translucent. After the onions are translucent add chopped ginger, green chilli and garlic.

Cook chopped ginger, garlic and chillies and cook for 2-3 minutes. After that add chopped tomatoes.

Cook till the tomatoes are soft and tender. Add all the masalas like turmeric powder, red chilli powder, garam masala. Mix all the ingredients well and cook for a minute.

Add the boiled dal, half cup water and lemon juice. Mix well and cook for 2-3 minutes. 

Dal Fry is ready. Garnish with coriander leaves and serve hot with jeera rice.

INGREDIENTS
  • 1/4th cup Toor Dal/Pigeon Pea
  • 1/4th cup Moong Dal/Yellow Split Lentil
  • 1/4th cup Chana Dal/Split Bengal Gram
  • 2 tablespoon Ghee/Clarified Butter
  • 1/4th tablespoon Cumin Seeds
  • Pinch of Asafoetida
  • 4-5 Curry Leaves
  • 1 Dry Red Chilli
  • 1 Large Onion
  • 1 Green Chilli
  • 2-3 Cloves
  • 1/2 inch Ginger
  • 1 Medium Tomato
  • 1/4th tablespoon Turmeric Powder
  • 1/4th tablespoon Red Chilli Powder
  • 1/4th tablespoon Garam Masala
  • 1 tablespoon Lemon Juice
