Topra Pak
As Diwali cleaning is over now its time to prepare snacks and sweets. During festival of Diwali we make a few savoury snacks and sweets and store them so  when the guests arrive we are ready to serve. Topra Pak is a special sweet I usually make for Diwali festival. Topra Pak also known as kopra pak is a very famous dessert in India .Topra pak is very sweet in taste and suits all occasions and festivals. Topra/kopra means coconut which is considered very auspicious for offering to gods. As this sweet is made with coconuts and peanuts you can also eat it while on fast.  So lets proceed step by step.

The main ingredients we require for making topra/kopra pak are peanuts, sugar and shredded coconut.

In this recipe of topra/kopra pak I have used shredded/desiccated coconut available from market. However you can freshly grate coconut and make this sweet dish.

Place the Kadai on a low flame. Now add peanuts and dry roast them.

Roast the peanuts till they turn light golden brown and make sure you keep stirring continuously otherwise peanuts will burn.

Transfer the lightly roasted peanuts in a bowl. Peal the skin of the peanuts by rubbing them between your palms

In a grinder make fine powder of the peeled peanuts and keep aside.

Now lets start making syrup. In a deep bottom Kadai add sugar and water. The water should be sufficient to soak all the sugar

Mix the water and the sugar on a low flame and stirring occasionally

After all the sugar mixes with the water add 3-4 tablespoons of milk.

When you add milk to the syrup any dirt from sugar will start to separate and float on top

Now strain the syrup in another thick bottom vessel.

Doing the above steps will give you nice and clear white sugar syrup. Now cook the syrup till it thickens a little. You have to cook till you get one thread consistency for sugar syrup.

For checking the thread consistency take one spoon of syrup allow it cool and then press between to fingers and check the consistency.

Now add shredded coconut powder in the syrup

Mix syrup and coconut well and cook for about 5 minutes.

As you will be cooking the mixture will start to get thick as shown in the below picture. Then add the roasted peanut powder we prepared.

Mix all the ingredients well and add 1 tablespoon ghee and mix well.

Grease a plate with ghee and pour the mixture in that plate. After pouring the mixture press lightly with a bowl and flatten the mixture.

Garnish it with pistachios and set it to cool. After it cools make diamond shape

Topra Pak/Kopra Pak is ready.

Topra Pak

Tips
1.You can make Topra pak rich and colourful by adding saffron. Soak saffron in warm milk and add  it to Topra pak after adding desiccated coconut in sugar syrup.
2.Allow the dish to cool for 30 minutes and then cut them into pieces. Otherwise the pieces will be crumbled and not firm in square shape.
3.If you want to make haveli (temple) type of Prasad Topra pak then do not add peanut powder, saffron or mava. Just keep plain coconut barfi.
4.You can also add cardamom powder to the Topra pak if you like.
5.While greasing the plate add enough ghee almost 1 tablespoon so that the Topra pak doesn't stick on plate.
6.For making it more attractive you can cover the final Topra pak with edible silver foil.
