Pickles are an important part of a meal in India. Serving a pickle by the side of your main dish enhances the flavour of your meal. There is a wide range of pickles made in Indian household. Green Chilli pickle is a spicy pickle which is the quickest and easiest to make. It is an instant pickle as it does not require to go through the pickling process. The best thing about this pickle is its ready in minutes and can be eaten on same day. This pickle is a unique blend of green chillies and spices. It is the perfect pickle for green chilli lovers. In Gujarati we call it as Rai Wala Marcha. Green Chilli pickle tastes best with Theplas. So lets proceed step by step.
Select nice and spicy green chillies. If you cannot eat spicy chillies and still want to have this pickle you can also get chillies which are not spicy.
Ingredients required for this Instant Chilli Pickle/Rai Wala Marcha are very few. You will need turmeric powder, green chillies, yellow mustard seeds, cumin seeds and salt.
In a plate add turmeric powder, salt, yellow mustard seeds and cumin seeds. Add one tablespoon oil and mix all the ingredients well to form a mixture.
Slit the chillies and stuff them with the above mixture we prepared.
Use the mixture until all chillies are stuffed. Leave some mixture aside to sprinkle on top.
Store it in air tight container and it can last for a week.
Cut the stuffed chillies into small 1/2 inch pieces and add 1 tablespoon oil. Mix well and serve in a bowl. For every bowl serving that you prepare you have to cut the stuffed chillies, sprinkle some masala mixture and add 1 tablespoon oil. Serving this way gives a taste and feel of freshly prepared pickle. You can even cut the stuffed chillies and store in air tight container.
