Indians masala tea/chai is a common beverage in our culture. At our home the day starts with masala tea and newspaper :). This is again my MIL's recipe. Chai masala is a powder made with combination of different Indian spices. Adding this Chai Masala to your cup of tea will give nice aroma and flavours. You can adjust any ingredient according to your taste. This Tea Powder can be added just to plain milk and its called Masala Milk/Dudh. We use this masala also while making Gud Papdi and it gives nice flavours to the dish. To get the perfect Wah Taj! cup of tea we make Tea Masala Powder at home. So lets proceed step by step.


I make tea masala and store it for 2-3 months. It makes making masala chai everyday easy :). So the ingredients measurement is according to that you can adjust according to your use.

Ingredients we require to make Tea Masala Powder or Chai Masala are whole black pepper, cinnamon sticks, green cardamom, cloves and dried ginger.

Dried ginger is called soonth. And my mom in law makes soonth at home. Its very simple just take fresh ginger and wash it properly. Soak them over night in water and peel its skin. Again wash them and dry them in sun for a few days.

To make Chai Masala we need to make soonth powder first. So in a mortar add the soonth/dried ginger and with the help of pestle make a coarse soonth mixture. You can even do it in a mixer grinder too. This is my MIL's traditional way of making soonth powder. Now a days soonth powder is easily available in market, you can purchase that also to make your work little easy.

Now in a grinder add soonth mixture we prepared, green cardamom, cloves, black pepper powder and cinnamon sticks all together.

Grind all the ingredients to a fine powder. You can see in the picture below the powder is fine.

Sieve the powder. So that if there are any big particles they will be separated.

Tea Masala Powder or Chai Masala is ready.

Store it in container and use as required. Now you can enjoy the Wah Taj!! kind of perfect tea everyday.

INGREDIENTS
  • 100 gms Soonth/Soonth Powder(Dried Ginger Powder)
  • 100 gms Whole Black Pepper
  • 25 gms Cinnamon Sticks/Dalchini
  • 25 gms Green Cardamom/Elaichi
  • 25 gms Cloves/Lavang
