Lilva Katchori is one of the famous gujarati farsan/savoury snack. Its similar to samosas but with different filling. Lilva are pigeon peas cooked in indian spices and stuffed in katchori. Lilva katchori is one of my favourite snacks and wanted to have from a long time. To make it healthy and give it a twist I made Lilva Squares. The stuffing is same as lilva katchori only the outer crust is different. The crust is made with ready made pastry sheet. Lilva Squares are healthy as they are baked and time saving as you have jus make stuffing and stuff it in the sheets. These golden brown squares are best to go as quick snack on a lazy sunday. Serve the Lilva Squares hot with tomato ketchup and your favourite chutney. So lets proceed step by step.
Where I live its difficult to get all kinds of indian vegetables easily. Like methi, cluster beans, Pigeon peas etc. We can just get some very common indian vegetables like baby eggplant, ladyfinger and bottle gourd. So for this recipe of Lilva Squares I have used frozen Pigeon peas. You can use fresh pigeon peas if they are easily available to you.
Take about 1 cup of Tuver/Pigeon Peas. Wash it properly with water.
In a grinder grind tuver and coriander leaves into a coarse mixture.
Transfer the mixture in a bowl and keep side.
In a non stick pan heat oil.
After oil is hot add cumin seeds and allow them to crackle. After seeds crackle add asafoetida.
Now add ginger-garlic- chilli paste and saute till raw flavour disappears.
Now add the coarse mixture we prepared.
Now add turmeric powder, red chilli powder, sugar, lemon juice, garam masala and salt.
Mix all ingredients well and cook for 2 minutes.
Stuffing for our Lilva Squares is ready.
Before we start making squares preheat the oven 180 degrees for 15 minutes.
For making the outer crust I have used ready made puff pastry available in market easily. Make equal squares of pastry sheet.
Now place the filling on one side of pastry.
Cover the stuffing with other pastry square.
Now to close the ends of squares with help of fork make mark and seal it as shown in the picture below. Seal all the four sides of each square.
With help of ready made puff pastry I was able to make 12 Lilva Squares. In a foil place the Lilva Squares and they are ready to be baked.
Bake the squares at 180 degree for 15-20 minutes.
Our hot, crispy, golden, and yummy Lilva Squares are ready.
Serve hot with tomato ketchup.
