Peanut Potato Khichdi
As the fasting season is on foodies will be looking for fasting recipes. And as the ingredients used in fasting dishes are minimum we have to use the same ingredients and make new dishes. There are many popular fasting dishes like Sabudana Vada, Farali Pattice and Farali Samosa. But these recipes are time consuming and require a lot pre preparation. So thought of posting a quick and easy fasting dish. Peanut and Potato Khichdi simple and tasty dish. Its best dish for morning breakfast or snacks. You can even boil the potatoes in microwave to reduce the cooking time. So lets proceed step by step.


First of all lets start with a few preparations.

Finely peel and cut potatoes into cubes. Also finely chop ginger and chilli.

Take about 1 cup of peanuts and place them in grinder.

Grind them coarsely. Don't make them too finely otherwise they will become sticky.

Now lets start with the cooking process. Heat oil in a deep bottom non stick vessel.

Now add cumin seeds and allow them to crackle.

Add finely cut ginger and chillies and cook for a minute.

Now add the cut potatoes.

Add red chilli powder, salt, sugar and lime juice. You can add turmeric powder if you eat during the fast.

Now mix all the ingredients well and cook for 2-3 minutes.

Add the coarsely grounded peanut powder.

Mix peanut powder and potatoes well.

Peanut Potato Khichdi is ready. Garnish with coriander leaves and serve hot with tea.

INGREDIENTS
  • 1 cup Peanuts
  • 2 Potatoes
  • 1 tablespoon Green Chilli and ginger chopped
  • 4-5 tablespoon Oil
  • 1/2 tablespoon Red Chilli Powder
  • 1/4th tablespoon Sugar
  • 1/4th tablespoon Cumin seeds
  • 1 tablespoon Lemon Juice
  • Salt To Taste
