Tikha Gathiya is a popular gujarati tea time snack. Gathiya is a spicy and crunchy deep fried gram flour savoury. Gathiya comes in many varieties and different shapes. Gathiyas are a little spicier and thicker then sev. To make the gathiya you require a handy sev machine(moulds). The gram flour dough is filled in the handy machine and pressed through the moulds to make strands. Tikha Gathiya can be used as an ingredient to make chivda or can be eaten alone also. My mother makes gathiya, chakri, sakarpara and many other namkeens during festivals like diwali and holi. Gathiyas taste best with chutney or tea. So lets proceed step by step.
Sieve gram flour in a big bowl. Add asafoetida, red chilli powder, rock salt, 3 tablespoon oil, salt and garam masala.
Mix all the ingredients well and knead it to a firm dough by adding water. Grease the dough with little oil and keep aside for 10 minutes.
Now take the handy machine and place the big holes grill at bottom of the machine. And fill with the kneaded dough.
Now again place the grill and close the machine very tightly.
Heat oil in a Kadai. Place the machine on top of Kadai and make strands by turning the handle of the machine.
Now deep fry the strands in oil on medium flame till golden brown. Be careful they don't turn red.
Gathiyas are ready.
Serve with tea or peanut coriander chutney.
