Recipe of Pineapple & Sooji Sheera | How to Make Pineapple & Suji Halwa

Roasted semolina and juicy pineapple pudding

Sooji halwa is a very famous indian dessert commonly made in every household. Suji is semolina and halwa is pudding. I make suji sheera very often and had got bored of it. So just added pineapple chunks to the old suji halwa and it tasted great. 

Now Pineapple & Suji halwa has become one of the favourite indian desserts at our home. From elders to kids all love it. It is also called Ananas halwa. It is loaded generously with ghee and juicy pineapple chunks. The taste of the halwa is sweet and tangy. You can add other fruits like banana and apple but pineapple is the hero. Its a quick recipe so can be made not only for dessert but snacks also

We just require a 5 minute preparation before we start making halwa. Peel the pineapple and chop it into fine small chunks. Take about 3-4 tablespoon of milk heat it and add a pinch of saffron. Soak the saffron in milk and keep aside.

Tips

1.Always add the amount of ghee specified if you decrease it sheera will be dry and rough.
2.You can add cardamom powder to the halwa, as I don't like the taste I have skipped it.
3.Instead of pineapple chunks you can also add pineapple puree. Pineapple puree has to be added after suji is well roasted on ghee.
4.Suji can easily burn so never leave it unattended on gas. Stir continuously while roasting.
5.Taste the pineapple and accordingly add sugar.
6.Cut the pineapple chunks very fine so that they can be easily blended with suji.

So let's proceed step by step for making pineapple suji halwa


Chop the pineapple into small cubes. In a sauce pan add the chopped pineapple chunks and 1.5 cups water and sugar. Leave aside a few pieces for decoration

Bring it to boil and cook till the pineapple chunks are soft and tender. Add sugar according to the taste of pineapple. If its too sweet just add a little less sugar otherwise the sheera will become too sweet.


Meanwhile heat ghee/clarified butter in a thick bottom pan

Now add 10-12 pieces of cashew nuts & raisins and roast them for a minute



After dry fruits are roasted, keep them aside in a bowl 


Now boil some milk(about 1/4th cup) and about 10 strands kesar. Soak the kesar in warm milk and keep it aside

In the same pan add rava/suji/semolina


Roast the suji on a low flame till it changes it's color and you get a nice aroma


Pour the pineapple + water mixture gently as the mixture will splutter


Now add kesar + milk and allow everything to blend completely

At this step you can taste the sweetness of halwa you can add more sugar if the sweetness is less. Also check that you have got the perfect yellow(kesari) color. If not you can add more kesar or natural color extract. I have not added any color


Add dryfruits and mix well 


Pineapple and sooji halwa is ready. Garnish with pineapple chunks, cashewnuts and serve hot or warm.

  • 10-12 pieces of Cashew nuts & Raisins
  • 1/4th cup Milk
