Parathas are very popular north indian snack. The most famous parathas are Aloo Paratha and Gobi Paratha. In these Gobi Parathas spicy cauliflower mixture is stuffed into Indian bread. There are many ways in which gobi paratha is prepared but this is the way I make. And believe me it is such a quick and easy recipe and you do not require any special skills to make them at home. In this recipe cauliflower and onions are blended in a grinder and sprinkled with masalas. I usually make it for breakfasts during weekends. This hot golden brown Parathas taste best when topped with butter and served with chutney, curd or lemon pickle. So lets proceed step by step.
In a bowl sieve wheat flour. Add salt and oil to it. Now by adding water knead it to a soft dough. Grease the dough with oil and keep aside for 15-20 minutes.
Cut the florets of cauliflower and wash them properly. Chop onions, garlic, chillies and ginger.
Blend all the above ingredients together to fine mixture.
The mixture should be very fine so there are no lumps. Sprinkle salt on the mixture and leave aside for 10 minutes. Squeeze out all the water from mixture by pressing it between two hands.
Now add red chilli powder and garam masala.
Mix well. The stuffing for our Gobi Parathas is ready.
For making Parathas take portion of a dough and make them into flat chapati. Now add the stuffing we prepared. Bring the edges together. Roll the stuffed balls gently into a flat paratha.
Now shallow fry the Parathas in a non stick pan with oil or ghee on both the sides till they turn golden brown.
Gobi Parathas are ready.
Apply some butter and serve with chutney, curd or lemon pickle.
