Bharva mirchi & gundas is a classic indian recipe directly from Guajarati kitchen. It is stuffed with besam(gram flour). Green chillies are a little spicy so to balance the taste we add little jaggery. With this same masala you can stuff karela(bitter guard). This recipe has no onions or garlic and is a traditional gujarati recipe. Even Marwari's prefer eating Stuffed Green Chilli a lot. Gundas are a fruit and used for making pickles mainly. But you can even prepare stuffed gundas. The gundas are a little bitter in taste and have a seed inside. To remove the bitterness we stuff it with salt and leave it for a while. So lets proceed step by step.
Wash the mirchi and gunda.
Remove the tops of gundas and scoop out the seeds by breaking it with a sharp knife. Do it to all gundas and then stuff it with salt and keep aside for some time. Till then we will prepare the stuffing.
For the stuffing you require besan, jaggery, turmeric powder, coriander powder, red chilli powder, oil and salt. Whenever I prepare stuffing I always prefer making it a little more and then spread the leftover on the veg. It will give nice taste to the veg.
Mix all the ingredients well and the stuffing is ready.
Now fill the mirchi and gunda with the stuffing we prepared.
Our mirchis and gundas are stuffed. We have to pressure cook the stuffed chillies for 1 whistle and stuffed gundas for 3 whistles. After they are pressure cooked allow them to cool.
Now in a pan heat oil and add mustard seeds and allow them to crackle.
After the seeds crackle add the stuffed mirchi and saute for 2 minute.
Now add the stuffed gundas and the extra masala.
Now cook it for another 2-3 minutes. Our Stuffed Mirchi and Gundas are ready.
Garnish with coriander leaves and serve hot.
