Pulav (or Pulao) is a very popular rice dish which is generally served on occasions. Traditional Pulav is slightly sweet and made by frying long grain (or basmati) rice with cloves, cinnamon, cardamom, nuts and raisins. It tastes best with Gujarati Kadhi. Pulav is also made by frying rice with peas (Mutter Pulav). However the recipe that I am sharing here is of Tava Pulav. Tava Pulav is completely different from traditional Pulav. It is a popular roadside dish served by Pav Bhaji stalls in India. Rice is fried with the same vegetables which are used in Pav Bhaji along with Pav Bhaji Masala. It tastes great and has become very popular just like Pav Bhaji. Generally I also make Vegetable Raita with this Pulav. So lets proceed step by step.
Boil about 1 cup of long grain (Basmati) Rice. You can also soak the rice in water for 30 minutes before boiling. The rice will become double in volume after boiling.
Alongside also boil peas, chopped carrots, capsicum, potatoes and cauliflower. Remember do not pressure cook the vegetables as we want them to be crispy. So you can either boil them for 10-15 minutes in an open vessel or microwave them.
Outside Tava Pulav is made on a tava however we will use a non stick pan. Heat oil in the pan and add cumin seeds. After the seeds crackle add finely chopped onions and little salt. Allow it cook till they turn light brown and the oil separates.
Now add ginger garlic paste and cook till the raw flavour is gone. Add the tomatoes and cook till they become tender. Add some red chilli powder, pav bhaji masala and salt.
Now add all the boiled vegetables and cook for 2 minutes.
Now add the boiled rice. Mix gently and cook for 3 minutes making sure that the rice grains do not break.
Add lemon juice and garnish with coriander leaves. Tava Pulav is ready. Serve hot with Vegetable Raita and papad.
