Recipe of Rice Khichu | How to make Rice Khichu

We Gujarati people are very foodie and that is the reason why we have a huge variety of dishes for snacks, breakfast and main course. Rice Khichu is one of those traditional recipes which is very famous in Gujarat. Khichu can be easily made and does not need any special ingredients other then rice flour. Traditionally Khichu is served with raw oil and masala (or Red Chilli Powder) by the side. The one I have prepared here is the traditional version, however you can avoid the oil and masala and even serve the Khichu without anything else. So let us proceed step by step.

In order to make the Rice Khichu heat about 2 tablespoons of oil in a non stick deep bottom pan. After the oil heats add some cumin seeds. When the cumin seeds crackle add some finely chopped green chillies. Allow the green chillies to fry for about 2-3 minutes and add about 2 cups of water.
 
 
Allow the water to come to a boil. Add a pinch of Sodium Bicarbonate (Cooking Soda) and Salt to taste. Mix all the ingredients well. Now add the rice flour and start stirring continuously and quickly with a wooden spoon or belan so that no lumps are formed.
 
 
Cover the pan and allow to cook for another 5 minutes on low flame while stirring occasionally. Rice Khichu is ready.
 
 
   Serve hot with oil and masala (or Red Chilli Powder).
 

 

 
RECIPE OF RICE KHICHU
Rice Flour stirred and cooked with Green Chillies and served hot with Oil

TOTAL TIME:12 Minutes

INGREDIENTS
  • 1 cup Rice Flour
  • 2 tablespoons Oil
  • 2.5 cups Water
  • 2-3 Green Chillies Chopped
  • 1/2 tablespoon Cumin Seeds
  • A pinch of Sodium Bicarbonate (Cooking Soda)
  • For Garnishing Coriander Leaves
  • Salt To Taste

INSTRUCTIONS
  1. Heat the oil in a deep bottom non stick pan. Add cumin seeds
  2. After the seeds crackle add finely chopped green chillies.
  3. Sauté for 2 minutes and add water.
  4. Allow the water to come to boil and add salt and pinch of cooking soda.
  5. Mix all the ingredients well and add rice flour
  6. Start stirring continuously and quickly with a wooden spoon or belan so that no lumps are formed.
  7. Cover the pan and allow to cook for another 5 minutes on low flame while stirring occasionally. Rice Khichu is ready.
  8. Serve hot with oil and masala (or Red Chilli Powder).
