Recipe of Dahi vada | How to make Dahi vada

Have been blogging for a month now and shared many yummy recipes here. But the all important Indian chaats were missing in the list. So thought of sharing one. And what better way to start with other then the good old Dahi Vada. Dahi vada is famous Indian roadside snack (popularly known as a chaat in India). Lentil dumplings are deep fried and combined with curd and other spices. In my recipe of Dahi Vada I have also added small cubes of boiled potatoes and salted peanuts. This is how we get Dahi Vada in my hometown Jamnagar. Adding peanuts and boiled potatoes gives a very nice twist to the famous dish. So lets proceed step by step.

STEPS TO PREPARE THE DAHI VADAS

 
Take about 2 cups of urad dal (split black lentils) and 1 cup of  mung dal (yellow split lentil). Wash and soak both the dals together in water for at least 7 hours (or overnight).
 

The dals will become soft after soaking. Drain all the water from the dals and grind it to a fine batter. Add little water while grinding if required.

Make a fine paste of ginger and green chillies. Add the ginger chilli paste and some salt to the batter. Mix well. Dahi vada batter is now ready.

Heat oil in a pan for deep frying. Keep the flame to medium and place small dumplings of batter with hands or with spoon and fry them till they are crispy and golden brown. Make sure that the oil is not too hot or too cold.

Soak the fried vadas in lukewarm water for 10-15 minutes. The size of vadas will increase slightly and colour will turn pale brown. Drain and gently squeeze out the excess water from vadas.

Take some well beaten curd in a bowl and add some salt and cumin powder. Now add the squeezed vadas to the curd and sprinkle some red chilli powder and chopped coriander leaves. The Dahi Vadas are ready now. Allow them to chill in the refrigerator for at least 1 hour.
 

STEPS TO SERVE THE DAHI VADAS

 
Take out the chilled Dahi Vadas from the refrigerator and place 4-5 vadas in a medium sized serving bowl. Put a layer of well beaten curd on the vadas. 
 
Now add a pinch of red chilli powder, cumin powder and salt. Add peanut coriander chutney, garlic chutney and tamarind and dates chutney.
 
Add some finely chopped boiled potatoes and salted peanuts. Now put another layer of curd.
 
Mix everything well with the vadas. Dahi Vada is ready.
 
  
RECIPE OF DAHI VADA

INGREDIENTS
FOR DAHI VADAS
  • 2 cups Urad Dal
  • 1 cup Yellow Split Moong Dal
  • 2 Green Chillies
  • 1/2 inch Ginger
  • 1 cup Curd well beaten
  • 1/4th tablespoon Red Chilli Powder
  • 1/4th tablespoon Cumin Powder
  • Salt To Taste
  • Oil for Deep Frying
FOR SERVINGS
  • 4 Dahi Vadas
  • 1 cup Curd
  • 1 tablespoon Salted Peanuts
  • 1 tablespoon Boiled Potato cubes
  • pinch of Salt
  • pinch of Red Chilli Powder
  • pinch of Cumin Powder
  • 1/4th tablespoon Peanut Coriander Chutney
  • 1/4th tablespoon Tamarind Dates Chutney
  • 1/4th tablespoon Garlic Chutney
INSTRUCTIONS
FOR DAHI VADAS

  4. Add the ginger chilli paste and little salt to the batter. Mix well. Dahi Vada batter is ready.

  6. Keep the flame to medium and place small dumplings of batter with hands or with spoon and fry them till they are crispy and golden brown.
  7. Soak the fried vadas in lukewarm water for 10-15 minutes.
  8. The size of vadas will increase slightly and colour will turn pale brown.
  9. Drain and squeeze out the excess water from vadas.
  10. Beat the curd in a bowl and add little salt and cumin powder.
  11. Add the squeezed vadas to the curd and sprinkle red chilli powder and chopped coriander leaves.
  12. The vadas are ready now. Allow them to chill in the refrigerator for at least 1 hour.
FOR SERVING
  1. Place the chilled Dahi vadas in a medium sized serving bowl.
  2. Put a layer of well beaten curd on the vadas.
  3. Now add a pinch of red chilli powder, cumin powder and salt.
  4. Add peanut coriander chutney, garlic chutney and tamarind dates chutney.
  5. Add boiled potato cubes and salted peanuts.
  6. Put another layer of curd.
  7. Mix everything well with the vadas. Dahi Vada is ready.
