It
was a weekend and as usual wanted to have a good and filling breakfast. The weather outside was also not good so thought to spend the
day at home. So finally after a lot of discussion with my husband we decided to make Puri Bhaji. Puri Bhaji is one of our favourite breakfast recipes and brings back old memories from Bangalore. Its very simple recipe and takes about 40 minutes to prepare. There are also no special ingredients required. So lets proceed step by step
To
start with I always like to prepare the aata first for the puri and
keep it aside for some time so it becomes soft and the puris come out
nicely.
Take about 2 cups of Wheat flour in a small vessel and add 1 tablespoon of oil
to it and little salt to taste. Mix the batter with water to prepare
a soft dough and set aside.
Now
for the bhaji boil some 6-7 potatoes in a pressure cooker for about
3 whistles till they are completely cooked
After the potatoes cool peel
off the skin and cut into small cubes
Cut
some onions, coriander leaves, curry leaves and green chillies
Heat
oil in a Pan, add mustard seeds, hing, curry leaves, cumin seeds.
After the seeds crackle add onions.
Add
little salt so the onions cook faster. After the onions become
translucent add the green chillies and turmeric powder.
Cook
for about 5 minutes and add the potato cubes to the mixture. Add
salt to taste, coriander power and lemon juice. Mix the bhaji well and garnish with coriander leaves. Serve hot with
the puris

Lightly spiced boiled potato mix served with hot puris
