Guvar Dhokli/Cluster Beans and Flour Dumpling Curry is a traditional Gujarati dish
Most people don't like Guvar/gavar much and avoid eating it, as is slightly bitter in taste. But there are many hidden benefits of this humble vegetable. Listing down a few benefits of gavar/guvar/cluster beans

Guvar + Besan together doubles the health benefits of this veg. Guvar as i have mentioned above it's slightly bitter in taste, so we add a little sugar and lemon juice to balance the taste of curry. Guvar can also be cooked with potatoes but it tastes best with Gram Flour dhoklis. Its made generally during lunch time and is served with hot phulkas.
Guvar Dhokli is one of the frequently cooked sabzi at our home. My Father in law likes the cluster beans prepared with dumplings so much that he will always eat a extra phulka :).
It is a traditional recipe and hence also a bit lengthy.
Tips for making guvar dhokli
- I have made dhokli's in a deep plate on a stove, however you can make it in microwave.
- For making dhokli's in microwave make the gram flour paste and put it in a microwave safe vessel for 7-10 minutes.
- Till the knife comes out clean and dhoklis are done
- During the winter season i also prefer adding fresh green garlic to the veg. It gives a nice and yummy flavor

So lets start step by step for making guvar dhokli
First finely chop the Guvar
In a Kadai heat the oil. Add mustard seeds. After the seeds crackle add the chopped Guvar.
Fry the Guvar for about 2 minutes and add all the masalas including Turmeric Powder, Red Chilli Powder, Coriander Powder and Salt to taste
Mix all the ingredients well and cook for another 3 minutes. Add about 1.5 cups of water
Mix well and cover the Kadai with a deep bottom lid. Allow the Guvar to cook on low flame till we prepare the dhokli. Choose a lid with deep bottom so the Dhoklis can be cooked on the lid like shown in the picture below
While the Guvar cooks we will prepare the Dhokli (Gram Flour Dumplings) side by side. Take Gram Flour in a bowl
Add all the masalas to the flour like Turmeric Powder, Red Chilli Powder, Salt and about half table spoons of Oil
Mix all the masalas well with the flour and keep adding little water while stirring the mixture to make a fine paste. For 1.5 cups of Gram flour you will need about 3/4 cup of water. Make sure the Dhokli paste is consistent and the flour is mixed properly.
Now lightly grease the lid that we placed on the Kadai with a little oil and pour the dhokli mixture in the lid. As mentioned above the lid must have a slightly deep bottom so dhokli mixture can be placed in it.
Allow both the Guvar and the Dhokli paste to cook for about 15-20 minutes. If required add little more water to the Guvar. Check with a knife if the dhoklis paste is completely cooked. The dhokli paste should be dry and the knife should come out clean from the mixture.
After the dhokli paste is cooked take down the lid and divide the dhokli paste into small square or diamond shape dhoklis
Take out the individual dhoklis in a plate.
Add the dhoklis to the Guvar. Also add one finely chopped tomato, some freshly chopped coriander leaves, half table spoon sugar and some lemon juice
Mix the dhokli well with the Guvar and allow to cook for another 3-4 minutes
Guvar Dhokli is ready.
Serve the Guvar Dhokli with hot Phulkas (Chappati). The day I had made Guvar Dhokli I had also made Gujarati Toor Dal (Khati-Mithi), a full meal.

- 1/2 tablespoon Sugar
- Handful Coriander Leaves
Instructions
