Bread Chole

Spicy Chickpea Gravy served with bread and some salad by side

You might be thinking why am I posting the recipe of Chole with Bread. I mean isn't Chole to be eaten with Bhature. Yes that is absolutely true that Chole taste best with Bhature. However I make Bread Chole for few reasons.

Back in my hometown in Gujarat Bread Chole is a very popular road side dish. It is served with some onions and tomatoes on the side. Bhature requires deep frying so from a health point of view, Bread Chole is a better option. I have used brown bread in this recipe which further increases the nutritional value.

Chick Peas in itself are a great source of Protein. That's why I also make a salad with chik peas. It is called burnt chana salad and I generally make it for my kid at night.

In my hometown it is one of the most famous midnight snack. The spicy chole satisfies all your taste buds and midnight cravings. The best part is they come and serve the order in the car itself.

So let's proceed to make bread chole

Soak the Chole (Chick Peas) in water for about 8 hours. You can also soak the Chole overnight. Pressure cook the soaked Chole for about 5-6 whistles.  Make sure that the Chole are extremely soft and tender and effortlessly crush between your fingers. If the Chole are even slightly undercooked it will completely spoil the dish. You can also add black tea while cooking the Chole for that brown texture.

Finely chop onion, tomatoes and green chillies. Make sure you use nice and juicy ripe tomatoes to make that fine gravy (sauce).

Heat Oil in a Non Stick Pan (Kadai) and add cumin seeds and asafoetida. Once the seeds crackle add the chopped onions. Add a little salt so the onions cook faster.

Cook till the onions turn Golden Brown and all the oil separates

Now add some, ginger garlic paste and chopped green chillies

Now add tomato puree, mix all the ingredients well and cook for another 4-5 minutes

Cook the tomatoes for about 5 minutes and add some red chilly powder, coriander powder, cumin powder and turmeric powder. Add salt to taste

Add about half cup of water. Cook till the mixture turns into a fine gravy (masala). Add the cooked Chole to the gravy. You can also add some of the water used for cooking the Chole in the gravy. But remember not to put too much water in the gravy otherwise the gravy will become too watery and bland. Too less water and the Chole will taste dry.

Mix the Chole well in the gravy and cook for about 10 minutes. Finally add some lemon juice and garam masala.

Take the slices of fresh brown bread and cut the sides

Apply some melted butter on both sides of the bread

Cut the bread into triangle. Serve it hot with chole and some salad by side.
